INGREDIENTS

  • 2 to 2 1/2 lbs pork shoulder cut in cubes
  • 3 TBSP freshly crushed coriander seeds
  • 2 cups red wine
  • 3 TBSP olive oil
  • salt and pepper



DIRECTIONS

  1. In a large bowl stir together the pork, coriander seeds, and wine. Cover and refrigerate for at least 3 hours.
  2. Pour the pork and marinade into a dutch oven and bring to a boil over high heat.
  3. Reduce heat to medium-low and simmer, uncovered, for about 1 hour or until most of the liquid has evaporated.
  4. Add the oil to the pot along with salt and pepper to taste.
  5. Stir and cook for another 5 more minutes.
