Almond Green Beans

Fresh green beans sauteed in butter with shallot and sliced almonds.

Ingredients

8 ounces fresh green beans, trimmed
1 TBSP unsalted butter
1 shallot, finely chopped
1/4 cup sliced almonds
salt & pepper


Directions

1. Rinse the green beans thoroughly under cold water then place the beans in a skillet and cover with water. Bring to a boil over medium-high heat then cover the pan and reduce the heat to medium. Simmer the beans over medium heat for 2 minutes. Drain the beans and set aside.

2. Carefully wipe the pan dry and melt the butter over medium-high heat. Add the shallot, almonds, green beans, 1/8 tsp salt, and dash of pepper to the pan and cook, stirring often, until the beans just start to char, about 3 minutes.

3. Take the pan off the heat and season with additional salt & pepper if necessary.
