INGREDIENTS

  • Step 1:
  • 4 cups water
  • 3 cloves garlic, chopped
  • 3/4 cup celery, fine julienne
  • 3/4 cup carrot, fine julienne
  • 1/2 cup yellow onion, fine julienne
  • 2 TBSP whites of the green onion. thinly sliced
  • 1/2 cup soy sauce
  • Step 2:
  • 1/2 cup sherry
  • 2 TBSP rice vinegar
  • 2 TBSP honey
  • 1/4 tsp red pepper flakes
  • 1 1/2 cup green cabbage, finely shredded
  • 3/4 cup red pepper, fine julienne
  • Step 3.
  • 3 large zucchini,spiralized or cut julienne bu hand or on a mandolin
  • 2 tsp toasted sesame oil
  • Garnish:
  • sprigs of cilantro
  • green part of the green onion, sliced
  • lime wedges



DIRECTIONS

  1. In a large pot combine the Step 1 ingredients. Bring to a boil and then reduce to a simmer for 5 minutes.
  2. Add the Step 2 ingredients and bring back to a boil for 2-3 minutes.
  3. Add the zucchini and boil for 3 minutes more.
  4. Drizzle with the sesame oil.
  5. Ladle into bowls and garnish with a cilantro, green onions and a squeeze of lime.
