Au Gratin Potato Cups
Thinly sliced potatoes baked in muffin cups with cheddar cheese and heavy cream.

- 1 Pound Yukon Gold Potatoes
- 1 TBSP Butter, unsalted
- 2 oz Shredded Extra Sharp Cheddar Cheese
- 1 cup Heavy Cream
- pinch Cayenne Pepper
- 1/2 pinch Nutmeg
- 1 tsp Kosher Salt
- 1 pinch White Pepper
- 1 Egg

Directions
- Preheat oven to 375 degrees.
- Liberally butter 12 cupcake cups. (I used silicone muffin cups)
- Whisk cheddar, heavy cream, cayenne, nutmeg, salt, white pepper and the egg.
- Slice the potatoes paper thin on a mandolin and mix into the seasoned cream mixture.
- Fill each cup with coated potatoes pour a little custard on the top of each cup.
- Bake 30 minutes.
