Baked Keftethes with Tzatziki
Greek meatballs made with beef, pork, red onion, mint and lemon. Served with a homemade tzatziki sauce.

Ingredients
- MEATBALLS:
- 1 pound ground beef
- 8 ounces ground pork
- 1 cup panko breadcrumbs
- 1 large egg
- 1 garlic clove, minced
- 1/4 cup finely chopped red onion
- 1 TBSP freshly chopped mint leaves
- 1 tsp dried oregano
- 3/4 tsp salt
- 1/4 tsp pepper
- zest and juice of 1/2 lemon
- TZATZIKI SAUCE:
- 1 medium cucumber
- 11-ounces plain Greek yogurt
- 1 clove garlic, minced
- 1 TBSP olive oil
- 2 tsp lemon juice
- 1/4 tsp dried dill
- 1/4 tsp salt
- 1/8 tsp pepper

Directions
- MEATBALLS:
- Mix all the meatball ingredients together in a large mixing bowl until well combined. Cover the bowl and refrigerate the mixture for 1 hour to allow the flavors to meld.
- Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper.
- Take the mixture out of the fridge and use your hands to form balls around 1-inch in diameter. Place the balls on the lined baking sheet.
- Bake the meatballs in the preheated oven for 12 to 15 minutes or until cooked through.
- TZATZIKI SAUCE:
- Peel the cucumber then grate it and squeeze out any excess water. Mix the cucumber with the remaining tzatziki sauce ingredients in a bowl until well combined. Season with additional salt & pepper to taste.
