Baked Keftethes with Tzatziki

Greek meatballs made with beef, pork, red onion, mint and lemon. Served with a homemade tzatziki sauce.

Baked Keftethes with Tzatziki

Ingredients

MEATBALLS:
1 pound ground beef
8 ounces ground pork
1 cup panko breadcrumbs
1 large egg
1 garlic clove, minced
1/4 cup finely chopped red onion
1 TBSP freshly chopped mint leaves
1 tsp dried oregano
3/4 tsp salt
1/4 tsp pepper
zest and juice of 1/2 lemon
TZATZIKI SAUCE:
1 medium cucumber
11-ounces plain Greek yogurt
1 clove garlic, minced
1 TBSP olive oil
2 tsp lemon juice
1/4 tsp dried dill
1/4 tsp salt
1/8 tsp pepper


Directions

MEATBALLS:

1. Mix all the meatball ingredients together in a large mixing bowl until well combined. Cover the bowl and refrigerate the mixture for 1 hour to allow the flavors to meld.

2. Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper.

3. Take the mixture out of the fridge and use your hands to form balls around 1-inch in diameter. Place the balls on the lined baking sheet.

4. Bake the meatballs in the preheated oven for 12 to 15 minutes or until cooked through.


TZATZIKI SAUCE:

1. Peel the cucumber then grate it and squeeze out any excess water. Mix the cucumber with the remaining tzatziki sauce ingredients in a bowl until well combined. Season with additional salt & pepper to taste.
