INGREDIENTS
2 TBSP olive oil
1 large yellow onion, finely chopped
2 medium garlic cloves, minced
1 cup uncooked long-grain brown rice
1 cup fresh corn kernels
1 jalapeno, seeded and finely chopped
1 1/4 cups water
1 TBSP
chili powder
salt & pepper
1/2 cup freshly chopped cilantro

DIRECTIONS
Preheat the oven to 375°F.
Heat the oil in a medium-size saucepan over medium-high heat.
Add the onion and garlic to the pan and cook, stirring often until the onion softens a bit, about 2 minutes.
Stir in the rice, corn, and jalapeno and cook, while stirring, for about 1 minute.
Add the water, chili powder, and 1/2 tsp salt to the pan and bring to a boil.
Carefully pour the contents of the pan into a 2-quart baking dish then cover tightly with aluminum foil.
Bake in the preheated oven for 1 hour.
Take the rice out of the oven then carefully remove the foil and fluff the rice with a fork.
Stir in the cilantro and season with salt & pepper to taste.
