Baked Spinach and Goat Cheese Sandwiches
A grilled cheese sandwich made in the oven with spinach, mozzarella and goat cheese.

- 2 TBSP unsalted butter, softened
- 1/4 tsp garlic powder
- 4 slices whole grain sandwich bread
- 1/2 cup finely chopped spinach leaves
- 2 ounces crumbled goat cheese
- 3 ounces shredded mozzarella cheese
- dash of red pepper flakes

Directions
- Preheat the oven to 450°F.
- Mix the softened butter and garlic powder together in a small bowl.
- In a large bowl mix the spinach, cheeses, and red pepper flakes.
- Butter one side of each piece of bread with the garlic butter. Lay two pieces of the bread buttered side down onto a baking sheet. Lightly press the spinach and cheese mixture onto the two bread slices then top with the remaining two bread slices buttered side up.
- Bake in the preheated oven for 7 minutes then flip and bake 5 more minutes or until the bread is browned and crisp on both sides.
