Baked White Cheddar Grits

Ingredients
4 cups water
3 TBSP unsalted butter
1/2 tsp salt
1/2 tsp pepper
9 ounces (about 1 1/2 cups) stone ground white grits
6 ounces white cheddar cheese, finely shredded
1 cup whole milk
2 large eggs
Directions
1. Preheat oven to 350°F.
2. In a medium saucepan combine the water, butter, salt, and pepper, bring to a boil over medium-high heat.
3. Stir in the grits very slowly (so they don't clump) and return to a boil.
4. Reduce heat to low and cook, stirring often, for about 15 minutes.
5. Take the grits off the heat and stir in the cheese until melted.
6. Lightly whisk the milk and eggs in a bowl then stir in with the grits.
7. Pour the grits into a 8x8 baking dish and bake uncovered for 1 hour or until top is lightly browned and eggs are set.
