Mix together balsamic vinegar, soy sauce, ginger, and sesame oil together in a bowl. Brush the tops of the cod with the dressing then spoon the remaining of it evenly over the fish. Top the fish with plenty of fresh cracked black pepper.
Cover the baking dish tightly with aluminum foil and bake in the preheated oven until fish flakes easily with a fork and spinach is wilted, 16 to 20 minutes.
