Basic Chinese Pork Fried Rice

1 1/2 cups cooked rice, refrigerated for at least 2 hours
1 medium yellow onion, diced
1/4 cup carrots, finely diced
1/4 cup peas
12 oz pork loin, cut into 1/4 to 1/2 inch pieces
1 TBSP chili garlic sauce
3 TBSP soy sauce
1 tsp sesame oil
1 TBSP canola oil
2 eggs, lightly beaten


1. In small bowl mix the chili garlic sauce, soy sauce and sesame oil. Place the pork in a bowl and pour the sauce mixture over top. Cover the pork and refrigerate at least 1 hour.

2. Heat the canola oil in a wok over high heat.

3. When the oil begins to shimmer add the onion and cook for about 30 seconds stirring occasionally.

4. Strain the pork and reserve any leftover liquid.

5. Cook the pork in the wok with the onion about 2 to 3 minutes, stirring occasionally.

6. Add in the carrots, peas, rice and the reserved marinade from the pork and cook and stir for about 2 more minutes.

7. Make a well in the middle of the rice mixture and pour in the eggs.

8. Scramble the eggs and stir in with the rice.

9. Take off the heat and serve warm.

Could use a little more flavor
Try doubling the marinade to give it some more flavor
