Bold Date BBQ Baby Back Ribs
Oven baked baby back ribs with a bold and spicy bbq sauce made with fresh dates.

Ingredients
- 3 pounds baby back pork ribs
- salt & pepper
- THE DATE BBQ SAUCE:
- 8 ounces Medjool dates, pitted and chopped
- 1 cup hot water
- 3/4 cup distilled white vinegar
- 5 TBSP tomato paste
- 1 1/2 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp dried mustard
- 1/4 tsp ground black pepper
- 1/8 tsp cayenne pepper

Directions
- Preheat the oven to 300°F. Line a rimmed baking sheet with aluminum foil.
- Use a small knife to lift up one end of the skin membrane from the bone-side of the ribs and then using a paper towel and your fingers pull it off. Pat the ribs dry with paper towels then season generously all over with salt & pepper.
- Lay the ribs meat-side up on the foil lined baking sheet. Cover the ribs tightly with aluminum foil and bake in the preheated oven for 3 hours.
- Make the BBQ sauce while the ribs cook (see below).
- Take the ribs out of the oven and increase the oven temperature to 450°F. Carefully remove the foil cover from the ribs and slather them all over with as much of the BBQ sauce as you like. When the oven has preheated bake the ribs uncovered for about 15 more minutes. Serve ribs with any remaining BBQ sauce on the side.
- THE DATE BBQ SAUCE:
- Place the dates and hot water into a food processor or blender and blend until smooth. Scrape mixture into a medium size saucepan.
- Stir the remaining ingredients into the saucepan with the dates and bring to a boil over medium-high heat.
- Reduce heat to low and simmer, stirring occasionally, about 30 minutes.
- Take off the heat and allow sauce to cool to room temperature.
- Transfer sauce to a covered container until ready to use.
