Mix the warm water with the salt in a large bowl until salt is dissolved. Submerge the chops in the water, cover with plastic wrap and refrigerate for 3 hours.
Preheat the oven to 375°F.
Remove the chops from the brine and rinse in cold water. Pat the chops dry with paper towels then cover all over with the olive oil. Rub the Cajun seasoning evenly all over the chops and set aside.
Heat a large oven safe skillet over high heat until very hot. Sear the pork chops for 2 minutes on one side then flip and sear on the other side for 2 minutes. Remove the pan from the stove and place in the oven. Cook in the preheated oven for about 10 minutes or until the chops have an internal temperate of about 145°F.
Remove the chops from the oven, place on a plate and loosely cover them with aluminum foil, let rest 10 minutes before serving.
