6 TBSP frozen unsalted butter, cut into small cubes
4 ounces sharp cheddar cheese, shredded
3/4 cup heavy cream
2 large eggs, beaten
about 1 TBSP whole milk
DIRECTIONS
Preheat the oven to 400°F.
In a large mixing bowl mix together the flour, baking powder, salt, and cayenne until well combined.
Add the butter cubes to the bowl and use your fingers to lightly press the butter into the flour while mixing.
Add the cheese, heavy cream, and beaten eggs into the bowl and gently stir until a dough is formed.
Lightly flour a flat work surface and pat the dough into a circle roughly 3/4-inch thick.
Use a 3-inch round cutter to cut out rounds and place them on a rimmed baking sheet at least 1-inch apart (you should end up with about 8 3-inch rounds that are about 3/4-inch high).
Brush the tops of the dough rounds with the milk then bake in the preheated oven until browned on top, about 20 minutes.
