Cheesy Egg and Bell Pepper Breakfast Muffins

Baked scrambled egg muffins made with red bell pepper and sharp cheddar cheese.

Cheesy Egg and Bell Pepper Breakfast Muffins recipe

Ingredients

  • 1 tsp olive oil
  • 12 large eggs
  • 4 ounces (about 1 cup) sharp cheddar cheese, shredded
  • 1 medium red bell pepper, seeded and diced
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper




Directions

  1. Preheat the oven to 375°F.

  2. Grease the inside of a 12-cup muffin tin using the olive oil.

  3. In a large measuring cup beat the eggs well with a fork.

  4. Stir the cheese, bell pepper, salt, and pepper in with the eggs until well combined.

  5. Pour the egg mixture evenly into the greased muffin cups.

  6. Bake in the preheated oven for about 16 minutes or until the eggs are set.

  7. Take the muffins out of the oven and allow to cool for 5 minutes then use a butter knife to carefully remove the muffins from the pan.
