Cheesy Egg and Bell Pepper Breakfast Muffins

Ingredients
- 1 tsp olive oil
- 12 large eggs
- 4 ounces (about 1 cup) sharp cheddar cheese, shredded
- 1 medium red bell pepper, seeded and diced
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
Directions
- Preheat the oven to 375°F.
- Grease the inside of a 12-cup muffin tin using the olive oil.
- In a large measuring cup beat the eggs well with a fork.
- Stir the cheese, bell pepper, salt, and pepper in with the eggs until well combined.
- Pour the egg mixture evenly into the greased muffin cups.
- Bake in the preheated oven for about 16 minutes or until the eggs are set.
- Take the muffins out of the oven and allow to cool for 5 minutes then use a butter knife to carefully remove the muffins from the pan.
