Chicken and Spinach Pizza with Havarti Cheese
A homemade pizza dough brushed with an herb garlic oil then topped with sliced chicken breast, baby spinach, and a mix of havarti and mozzarella cheeses.

Ingredients
- THE DOUGH:
- 1 1/4 cups warm water
- 1 package (2 1/4 tsp) active dry yeast
- 2 cups all-purpose flour
- 1 cup whole wheat flour
- 1 TBSP olive oil
- 1/2 tsp tsp salt
- THE TOPPINGS:
- olive oil (about 1/4 cup)
- 1 medium garlic clove, minced
- 1 tsp dried oregano
- 1/4 tsp crushed red pepper
- salt & freshly grated black pepper
- 8 ounces boneless skinless chicken breast, sliced thin
- 5 ounces havarti cheese, shredded
- 4 ounces mozzarella cheese, shredded
- 2 ounces fresh baby spinach leaves, roughly chopped

- THE DOUGH:
- Stir together the yeast and water in a large mixing bowl then set aside for 5 minutes to allow the yeast to hydrate.
- Stir in the flours, olive oil, and salt then knead the dough by hand in the bowl for about 10 minutes.
- Loosely cover the bowl and set aside in a warm place for about 1 hour to allow the dough to rise.
- THE TOPPINGS:
- In a small bowl mix together 3 TBSP of olive oil, garlic, oregano, crushed red pepper, and 1/8 tsp salt until well combined then set aside.
- In another bowl mix together the sliced chicken, 1 TBSP olive oil, 1/4 tsp salt, and 1/8 tsp black pepper until chicken is evenly coated.
- Heat a skillet over medium heat then cook the chicken, stirring often, until no longer pink, about 7 minutes.
- Preheat the oven to 475°F.
- Stretch the dough out onto a large pizza pan or baking sheet pan then brush the garlic oil on top then set aside while the oven preheats.
- Pre-bake the pizza dough in the oven for 10 minutes.
- Take the dough out of the oven and sprinkle on the cheeses then top with the chopped spinach and chicken.
- Return the pizza to the oven and bake until the crust is crisp and the cheese just starts to brown, about 10 more minutes.
