INGREDIENTS

  • 1 pound boneless skinless chicken breasts, cut into 6 even-sized pieces
  • 1 cup flour
  • salt & freshly ground black pepper
  • 2 tsp garlic powder
  • 1/2 cup olive oil
  • 1 medium yellow onion, thinly sliced
  • 1 medium bell pepper, thinly sliced
  • 2 medium garlic cloves, chopped
  • 1 tsp crushed red pepper flakes
  • 1/2 cup water
  • 2 TBSP tomato paste
  • 14-ounce can diced tomatoes
  • 1/4 tsp dried basil
  • 1/8 tsp dried oregano
  • 8 ounces angel hair pasta



DIRECTIONS

  1. Mix the flour, kosher salt, garlic powder, 2 tsp salt, and 1/4 tsp black pepper together in a large bowl.
  2. Heat the oil in a saute pan over medium-high heat.
  3. Dredge the chicken pieces in the flour mixture then fry them in the hot oil about 5 to 6 minutes or until chicken registers 160°F.
  4. Place the chicken on a plate and set aside.
  5. Discard all but 1 TBSP of oil from the saute pan then return the pan to the stove over medium heat.
  6. Saute the onions and peppers in the pan until softened, 6 to 8 minutes.
  7. Add the garlic cloves and crushed red pepper then saute an additional minute or until fragrant. Add salt and pepper to taste.
  8. Place half the onion and pepper mix onto a plate and set side.
  9. Pour the water in the pan with the remaining onion and pepper mix and saute scraping up the bottom of the pan.
  10. Stir in the tomato paste, diced tomatoes, basil, oregano, and 1/2 tsp salt and simmer until heated through.
  11. Take the pan off the heat and season with salt & pepper to taste then return the chicken to the pan and cover with a lid.
  12. Cook the past according to package directions then drain.
  13. Serve the chicken and sauce over the pasta and topped with the remaining onions and peppers.
