Ingredients

1 lb chicken breast cut into small strips
1 large yellow onion, diced
7oz can of Chipotles in Adobo sauce
2 cloves garlic minced
1 tsp cumin
2 tsp cooking oil
1 cup water
salt and pepper
12 flour tortillas, 6 inch
1 avocado diced
1/2 head of iceberg lettuce, shredded
6 oz Monterey Jack cheese, shredded
juice from 1 lime
sour cream

Directions

1. Liberally season the sliced chicken with salt and pepper.

2. Remove chipotles from can and dice small, return to the can with the adobo sauce.

3. Heat the oil over medium-high heat in a dutch oven or large saucepan. Add the chicken and onions and cook stirring occasionally about 3 to 4 minutes.

4. Add the minced garlic and stir until fragrant about 30 seconds. Turn heat to medium-low and add the water, cumin, chipotles and adobo sauce to the pan.

6. Simmer for about 10 minutes or until most liquid has evaporated breaking up the chicken and stirring occasionally. Add salt and pepper to taste.

7. Warm up tortillas and divide chicken mixture in the center of each tortilla. Top with the cheese, lettuce, sour cream, avocado and a little lime juice.

Notes & Tips

These tacos are very spicy, adjust the amount of chipotles added according to your taste.
