1 Cup quinoa
2 Cup Vegetable Broth
3 Green Onion, sliced
1 tsp Dijon Mustard
1 TBSP Fresh Squeezed Lime Juice
1 TBSP Rice Vinegar
2 tsp Kosher Salt
1 tsp Loco Caliente Spice Mix
1 tsp Cilantro, chopped
1.5 TBSP Oil
Salad Veggies:
1/2 Cup Tomatoes, diced
1/2 Cup Cucumbers, diced
1/2 Avocado, diced
1/4 Cup Red Onion, diced
1/4 Cup Orange Pepper, diced
1/4 Cup Yellow Pepper, diced


1. Bring quinoa and veg broth to a boil in a small sauce pot. Cover and reduce heat to very low. Simmer over a tiny little flame 20 minutes. Turn off DO NOT LIFT THE LID ans allow to rest over the off burner 10 minutes. Uncover and allow to cool 30 minutes or until tempid.

2.In the meantime make the dressing in a medium bowl by combining all ingredients and whisking together.

3. In a large bowl mix the veggies, cooled quinoa and 2/3 of the dressing. taste and season with S & P and Loco Caliente seasoning as needed.

4. Chill for 4 hour in the fridge. Toss and add more dressing if too dry.

Notes & Tips

This could be served warm,as a side dish or cold as a salad
