Also known as Texas Caviar this dip is made up of black eyed peas, black beans, onion, peppers, corn, and avocado then tossed with a lime vinaigrette dressing and served with tortilla chips.
Pick through the beans and black eyed peas and rinse them thoroughly. Place the beans and peas in a large bowl and cover with plenty of water. Place a lid on the bowl and let soak for 12 up to 24 hours.
Drain and rinse the beans and peas then place in a pot and cover with plenty of water. Bring to a boil over medium-high heat. Reduce the heat to medium-low, cover the pot and simmer, stirring occasionally, until the beans and peas are tender, 45 to 60 minutes. Drain the beans and peas then rinse them under cold water.
In a large bowl mix together the black eyed peas, black beans, jalapeno, avocado, corn, tomato, bell pepper, onion, and cilantro.
In a separate small bowl whisk together the olive oil, lime juice, garlic, cumin, 1/2 tsp salt, and 1/4 tsp pepper then drizzle over top and toss to combine.
Taste and season with extra salt & pepper if necessary. Serve with tortilla chips.
