Cowboy Caviar

Also known as Texas Caviar this dip is made up of black eyed peas, black beans, onion, peppers, corn, and avocado then tossed with a lime vinaigrette dressing and served with tortilla chips.

INGREDIENTS

  • 1/2 cup dried black eyed peas
  • 1/2 cup dried black beans
  • 1 jalapeno, seeded and chopped small
  • 1 avocado, peeled, pitted, and diced
  • fresh corn kernels from 1 large ear of corn
  • 1 Roma tomato, chopped small
  • 1 red bell pepper, chopped small
  • 1/2 red onion, diced
  • 1/2 cup freshly chopped cilantro
  • 1/4 cup olive oil
  • 2 TBSP fresh lime juice
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • salt & pepper
  • tortilla chips for serving



DIRECTIONS

  1. Pick through the beans and black eyed peas and rinse them thoroughly. Place the beans and peas in a large bowl and cover with plenty of water. Place a lid on the bowl and let soak for 12 up to 24 hours.
  2. Drain and rinse the beans and peas then place in a pot and cover with plenty of water. Bring to a boil over medium-high heat. Reduce the heat to medium-low, cover the pot and simmer, stirring occasionally, until the beans and peas are tender, 45 to 60 minutes. Drain the beans and peas then rinse them under cold water.
  3. In a large bowl mix together the black eyed peas, black beans, jalapeno, avocado, corn, tomato, bell pepper, onion, and cilantro.
  4. In a separate small bowl whisk together the olive oil, lime juice, garlic, cumin, 1/2 tsp salt, and 1/4 tsp pepper then drizzle over top and toss to combine.
  5. Taste and season with extra salt & pepper if necessary. Serve with tortilla chips.
