Crunchy Baked Cod with Creamy Dill Sauce

Ingredients
- 1 large egg
- 1 cup panko breadcrumbs
- 1 tsp salt
- 1/4 tsp pepper
- 4 cod fillets (about 6 ounces each)
- 1 lemon, cut into wedges
- DILL SAUCE:
- 1/2 cup mayonnaise
- 2 tsp whole milk
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp dried dill
- 1/4 tsp salt
- 1/8 tsp pepper

Directions
- Preheat the oven to 425°F. Line a baking sheet with foil and place a wire baking rack on top.
- Whisk the egg in a bowl and set aside. Stir the breadcrumbs, salt, and pepper in a separate bowl.
- Working one at a time gently dip a cod fillet in the egg until coated then shake off any excess egg and dip the cod into the breadcrumb mixture. Coat the cod in the breadcrumbs as best as you can then place on the wire baking rack. Continue with the remaining fish.
- Bake the fish in the preheated oven until fish is cooked through and flaky, about 15 minutes.
- Combine the DILL SAUCE ingredients together in a small bowl and stir until well combined.
- Serve the fish with the dill sauce and lemon wedges on the side.
