1 lb boneless skinless chicken diced
1 cup red lentils
1 medium onion, minced
1 medium carrot, diced
1 TBSP garlic powder
2 TBSP curry powder
3 TBSP vegetable oil
4 cups chicken broth


1. Rinse lentils and set aside.

2. In a dutch oven heat the oil over medium high and add carrot, onion and garlic. Cook stirring often about 3 minutes.

3. Stir in chicken and curry powder and cook for an additional 3 minutes.

4. Stir in the chicken broth and bring to a boil.

5. Stir in lentils and reduce heat to low.

6. Simmer uncovered for 20 to 25 minutes or until lentils are soft.

7. Add salt and pepper to taste.
