INGREDIENTS
1/4 cup Dijon mustard
2 TBSP olive oil
1 tsp salt
1 tsp pepper
2 pound boneless pork shoulder/butt

DIRECTIONS
Preheat the oven to 450°F.
Line the inside bottom of a rimmed baking sheet with aluminum foil then lay a wire baking rack on top.
In a small bowl mix together the Dijon, oil, salt, and pepper.
Spread the mustard mixture evenly all over the pork then lay the pork onto the wire rack.
Roast the pork in the preheated oven for 15 minutes.
Reduce the oven temperature to 375° and roast the pork 45 to 55 more minutes or until cooked through (internal temperature of about 145°F).
Remove the pork from the oven and let sit for 15 minutes before slicing and serving.
