Dijon Roasted Pork
Boneless pork shoulder rubbed with Dijon mustard then roast in the oven until crisp on the outside and tender and juicy on the inside.

Ingredients
- 1/4 cup Dijon mustard
- 2 TBSP olive oil
- 1 tsp salt
- 1 tsp pepper
- 2 pound boneless pork shoulder/butt
Directions
- Preheat the oven to 450°F.
- Line the inside bottom of a rimmed baking sheet with aluminum foil then lay a wire baking rack on top.
- In a small bowl mix together the Dijon, oil, salt, and pepper.
- Spread the mustard mixture evenly all over the pork then lay the pork onto the wire rack.
- Roast the pork in the preheated oven for 15 minutes.
- Reduce the oven temperature to 375° and roast the pork 45 to 55 more minutes or until cooked through (internal temperature of about 145°F).
- Remove the pork from the oven and let sit for 15 minutes before slicing and serving.
