Spare ribs glazed in honey and liquid smoke then coated with BBQ spices and cooked in the oven until caramelized.

INGREDIENTS

  • 5 pound pork spare ribs, membrane removed and patted dry
  • 2 TBSP raw honey
  • 1/2 tsp liquid smoke
  • 1/4 cup kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp ground coriander
  • 1/4 tsp cumin
  • 1 tsp chili powder
  • 1/4 tsp ground mustard
  • 1 TBSP garlic powder
  • 1 tsp onion powder
  • 1 1/2 TBSP paprika
  • 1 tsp smoked paprika



DIRECTIONS

  1. Heat the oven to 250 degrees F.
  2. Mix the honey and liquid smoke together in a small bowl. In a second bowl mix together the salt, pepper, coriander, cumin, chili powder, mustard powder, garlic, onion, paprika, and smoked paprika.
  3. Brush the honey mixture all over the ribs then sprinkle all over with the dry spices.
  4. Place the ribs in a large sheet of foil and crimp the edges all the way around forming a seal. Put the foil package on a baking sheet lined with a baking rack.
  5. Place in the oven and cook for 3 hours.
  6. Turn the oven up to 425 degrees F. Remove the foil from the ribs and carefully pour off all the liquid. Place the ribs, meat side up back on to the rack over the baking sheet. Bake at 425 degrees F for 30 more minutes or until well caramelized.

If making this again I would cook at 250 degrees F for an extra hour and decrease the salt to 2 TBSP. These ribs tasted great but, should have been more tender.
