Easy Slow Cooker Carnitas (Mexican Pulled Pork)

Ingredients
1 yellow onion, chopped
1 jalapeno, chopped
3 pounds bone-in pork shoulder
1 tsp dried oregano
1 tsp ground cumin
1 tsp garlic powder
1/4 tsp cayenne
salt & pepper
Directions
1. Place the chopped onion and jalapeno in the bottom of a 6-quart slow cooker.
2. In a small bowl mix together the oregano, cumin, garlic, cayenne and 1 tsp salt. Pat the pork dry with paper towels and rub the spice mix all over the pork. Place the pork in the slow cooker on top of the onions and jalapeno.
3. Place a lid on the slow cooker and cook on LOW for about 8 hours or until pork is tender and can be easily pulled apart.
4. Turn off the slow cooker and shred the pork using two forks, discarding any bones. Stir and season with salt & pepper to taste.
