Put 1 banana, the vanilla, baking powder and eggs into a food processor and blend it up.
In a bowl mash the 2 remaining bananas with a potato masher or the back of a fork. Add the egg mixture to the mashed bananas in the bowl.
Heat a griddle or skillet to medium and pour about 1/4 cup of the batter. Allow the bottom to set 1-3 minutes flip and cook and additional 1-3 minutes.
Finish all the batter and serve immediately with your favorite toppings.
Ok, I have made this recipe once a week for the past 6 months or so. Here's what I have found works the best.
1. Use room temperature 3 kinda ripe (not fully ripe!) bananas.
2. Use 1 tsp baking powder and 1 tsp vanilla.
3. Just put all the ingredients together and mash with a potato masher until combined.
