3 bananas, peeled and sliced
1/4 tsp vanilla
1/4 tsp baking powder

Makes 10-12 3 inch pancakes.
I added blueberries to the batter and it turned out great.
Total Time: 20 minutes
1. Put 1 banana, the vanilla, baking powder and eggs into a food processor and blend it up.
2. In a bowl mash the 2 remaining bananas with a potato masher or the back of a fork. Add the egg mixture to the mashed bananas in the bowl.
3. Heat a griddle or skillet to medium and pour about 1/4 cup of the batter. Allow the bottom to set 1-3 minutes flip and cook and additional 1-3 minutes.
4. Finish all the batter and serve immediately with your favorite toppings.
