INGREDIENTS
2 TBSP olive oil
2 pounds roma tomatoes
1/2 tsp garlic powder
1 tsp dried oregano
1/4 tsp crushed red pepper flakes
salt & pepper

DIRECTIONS
Use a sharp knife to cut a shallow X mark on the bottom (the opposite side of where the stem would be) of each tomato.
Bring a large pot of water to a boil.
Add the tomatoes to the boiling water and boil for 1 to 2 minutes or until the tomatoes start to peel a little.
Drain the tomatoes and rinse under cold water.
Peel the skin off the tomatoes and discard, the skins should peel off easily starting from where you cut an X mark.
Place the peeled tomatoes back into the now empty pot then use a potato masher to mash the tomatoes..
Stir the olive oil, garlic, oregano, crushed red pepper, and 1/2 tsp salt in with the tomatoes then bring to a boil over medium-high heat.
Reduce heat to medium-low and simmer, occasionally stirring and breaking up the tomatoes, for about 45 minutes or until the sauce has thickened.
Taste the sauce and season with additional salt & pepper if needed. Makes about 2 cups (16 ounces) of pizza sauce.
