Garlic and Parmesan Great Northern Beans
Great Northern beans cooked until tender then sauteed in olive oil with garlic, Parmesan cheese, and crushed red pepper.

Ingredients
- 8 ounces dried Great Northern white beans, rinsed
- 6 cups water
- 2 TBSP olive oil
- 4 medium garlic cloves, minced
- 1/4 tsp crushed red pepper flakes
- salt & freshly ground black pepper
- 1/4 cup freshly grated Parmesan cheese
- 1 TBSP fresh lemon juice
Directions
- Add the beans and water to a large saucepan over medium-high heat and bring to a boil.
- Reduce the heat to medium-low then cover the pan and simmer the beans until tender, about 1 hour.
- Drain the beans and set aside.
- Heat a large skillet over medium heat then drizzle 2 TBSP of olive oil into the skillet.
- Add the cooked beans, garlic, crushed red pepper, 1 tsp salt, and 1/4 tsp black pepper to the pan and stir to combine.
- Cook the beans, stirring often, for about 2 minutes.
- Take the beans off the heat and stir in the Parmesan and lemon juice.
- Taste the beans and season with additional salt & pepper if needed.
