INGREDIENTS

  • 8 ounces dried Great Northern white beans, rinsed
  • 6 cups water
  • 2 TBSP olive oil
  • 4 medium garlic cloves, minced
  • 1/4 tsp crushed red pepper flakes
  • salt & freshly ground black pepper
  • 1/4 cup freshly grated Parmesan cheese
  • 1 TBSP fresh lemon juice



DIRECTIONS

  1. Add the beans and water to a large saucepan over medium-high heat and bring to a boil.
  2. Reduce the heat to medium-low then cover the pan and simmer the beans until tender, about 1 hour.
  3. Drain the beans and set aside.
  4. Heat a large skillet over medium heat then drizzle 2 TBSP of olive oil into the skillet.
  5. Add the cooked beans, garlic, crushed red pepper, 1 tsp salt, and 1/4 tsp black pepper to the pan and stir to combine.
  6. Cook the beans, stirring often, for about 2 minutes.
  7. Take the beans off the heat and stir in the Parmesan and lemon juice.
  8. Taste the beans and season with additional salt & pepper if needed.
