Geera Pork
Servings: 4
Total Time: 1 hour cook time, 12 hours marinating
Ingredients
2 lbs pork loin, cut into 1 inch pieces
2 TBSP olive oil
2 TBSP cumin seeds (geera)
2 cups water
Marinade:
juice from 1 lime
1 habanero pepper, finely chopped
4 medium garlic cloves, minced
1 medium onion, finely chopped
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried cilantro
Directions
1. Combine the pork and the marinade ingredients together in a large bowl. Cover and refrigerate for 12 hours.
2. Remove the pork and marinade from the fridge.
3. Heat the oil in a dutch oven over medium-high until oil is very hot.
4. When the oil is hot add the cumin seeds and cook until the seeds begin making cracking sounds, about 5 seconds (careful not to let them burn!) then quickly add the pork and marinade into the dutch oven and stir to cover the pork pieces in the cumin seeds.
5. Pour the water into the pot and bring to a boil.
6. Reduce heat to medium-low, cover and simmer for 30 minutes.
7. Remove the lid, turn the heat up to high and cook, stirring occasionally, until all the liquid has evaporated, about 25 minutes.

Geera Pork is great by itself as an appetizer or you serve it with rice or bread as a main dish.
