German Potato Salad
A warm and sweet potato salad made up of baby gold potatoes, celery, onion, boiled eggs, bacon, and apple cider vinegar.

Ingredients
- 1 1/2 lbs yukon gold potatoes, halved
- 4 oz raw bacon, diced
- 1/4 cup celery, diced small
- 1/8 cup yellow onion, diced small
- 1/2 cup green onions, sliced thin
- 3 eggs, boiled and chopped
- 1/3 cup sugar
- 1/4 cup cider vinegar
- salt and pepper

Directions
- Salt some water in a pot and boil potatoes until they easily break up, about 15 to 20 minutes. Drain potatoes.
- Brown the bacon in a dutch oven over medium heat then add the sugar and carefully add the vinegar.
- Cook the bacon,sugar,vinegar mix until it becomes bubbly, about 5 minutes.
- Add the potatoes and turn the heat to low, mash about half the potatoes.
- Stir in the onion, celery, green onion and boiled eggs.
- Season with salt and pepper and serve warm.
