INGREDIENTS

  • PIZZA DOUGH:
  • 1 1/4 cups warm water
  • 1 package (2 1/4 tsp) active dry yeast
  • 2 cups bread flour
  • 1 cup whole wheat flour
  • 3/4 tsp salt
  • 2 TBSP olive oil plus a little extra
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp granulated garlic
  • 1/4 tsp crushed red pepper flakes
  • TOPPINGS:
  • 6 ounces mozzarella cheese
  • 2 ounces feta cheese, crumbled
  • about 4 grape tomatoes, sliced
  • about 8 kalamata olives, sliced
  • about 1/3 cup sliced red onion



DIRECTIONS

  1. Stir together the yeast and water in a large mixing bowl then set aside for 5 minutes to allow the yeast to hydrate.
  2. Stir in the flours and salt then knead by hand in the bowl for a few minutes, dough will be sticky.
  3. Loosely cover the bowl and set aside for 45 minutes to allow the dough to rise.
  4. Lightly oil a 14-inch pizza pan then stretch the dough to fit onto the pan.
  5. In a small bowl mix together the 2 TBSP of olive oil, oregano, basil, garlic, and crushed red pepper.
  6. Brush the herb-oil mix evenly on the top of the dough then set aside for 30 more minutes to rise a little more.
  7. Preheat the oven to 475°F.
  8. Bake the dough in the preheated oven for 10 minutes.
  9. Take the dough out of the oven then sprinkle on the mozzarella cheese, feta, tomatoes, olives, and red onion.
  10. Place back in the oven and bake for 11 to 13 more minutes.
