2 cups cucumber peeled, seeded and chopped into 1 inch cubes
1/2 cup grape tomatoes, cut in halves
1/2 cup yellow pepper cut in 1 inch slices
1/2 cup red onion julienned thinly
1/2 cup kalamata olives pitted and halved
1/4 cup pepperoncinis sliced
1/4 cup feta cheese crumbled
1 tsp kosher salt
1/4 tsp fresh ground pepper
1/4 tsp dill
1/2 tsp parsley
1/8 tsp oregano
1/4 tsp basil
1 TBSP red wine vinegar
2 TBSP olive oil


1. Mix all ingredients except for the feta cheese in a large bowl.

2. Cover and allow to marinate in the refrigerator for at least 1 hour.

3. Top with feta cheese and serve.
