INGREDIENTS

  • 2 cups cucumber peeled, seeded and chopped into 1 inch cubes
  • 1/2 cup grape tomatoes, cut in halves
  • 1/2 cup yellow pepper cut in 1 inch slices
  • 1/2 cup red onion julienned thinly
  • 1/2 cup kalamata olives pitted and halved
  • 1/4 cup pepperoncinis sliced
  • 1/4 cup feta cheese crumbled
  • 1 tsp kosher salt
  • 1/4 tsp fresh ground pepper
  • 1/4 tsp dill
  • 1/2 tsp parsley
  • 1/8 tsp oregano
  • 1/4 tsp basil
  • 1 TBSP red wine vinegar
  • 2 TBSP olive oil



DIRECTIONS

  1. Mix all ingredients except for the feta cheese in a large bowl.
  2. Cover and allow to marinate in the refrigerator for at least 1 hour.
  3. Top with feta cheese and serve.
