Have made thin sliced lunch meat from all the animal proteins except pork. never thought of it until recently. as good fortune would have it, the cruise I was on two weeks ago served it! Fantastic. the shape clearly said pork loin. So here I am.
I’m going to follow this recipe for technique, might change the seasoning but otherwise… as written. I have a nice slicer and am looking forward to the end result.
