INGREDIENTS
1 TBSP olive oil
salt & freshly ground black pepper
3 pound boneless beef chuck roast
2 medium carrots, finely chopped
1 red bell pepper, finely chopped
1 yellow onion, finely chopped
6 medium garlic cloves, minced
1/4 cup red wine vinegar
1 tsp dried basil
1 tsp dried oregano
1 tsp dried thyme

DIRECTIONS
Preheat the oven to 325°F.
In a small bowl mix together the oil, 1 tsp salt, and 1 tsp black pepper then rub the mixture all over the beef.
Heat a dutch oven on the stovetop over medium-high heat until the dutch oven is very hot.
Sear the beef in the dutch oven until well browned on each side, about 5 minutes per side, then transfer the beef to a plate and set aside.
Add the carrots, bell pepper, onion, and garlic to the dutch oven and cook, stirring often, until vegetables begin to brown, about 6 minutes.
Pour the red wine vinegar into the dutch oven and use a wooden spoon or spatula to scrape any stuck on bits from the bottom of the dutch oven.
Stir in the basil, oregano, thyme, and 1/2 tsp salt then place the beef back into the dutch oven.
Place the lid on the dutch oven then put in the preheated oven and cook until beef is tender, about 3 hours.
