Kale Salad with Apples, Cheddar, and Pecans
Bitter baby kale, crunchy gala apples, rich cheddar cheese, toasted pecans, and sweet shallot with an apple cider vinaigrette.

Ingredients
- 4 cups fresh baby kale
- 1 gala apple, cored and sliced
- 2 oounces cheddar cheese, cut into 1/4-inch cubes
- 1/2 cup toasted pecans
- Apple Cider Vinaigrette:
- 1 TBSP finely chopped shallot
- 1 tsp dijon mustard
- 2 tsp honey
- 2 TBSP apple cider vinegar
- 1 TBSP water
- 6 TBSP neutral flavored oil
- dash salt
- pinch pepper
