Ingredients

  • 4 cups fresh baby kale
  • 1 gala apple, cored and sliced
  • 2 oounces cheddar cheese, cut into 1/4-inch cubes
  • 1/2 cup toasted pecans
  • Apple Cider Vinaigrette:
  • 1 TBSP finely chopped shallot
  • 1 tsp dijon mustard
  • 2 tsp honey
  • 2 TBSP apple cider vinegar
  • 1 TBSP water
  • 6 TBSP neutral flavored oil
  • dash salt
  • pinch pepper

Directions

  1. Make the dressing by combining all the ingredients in a jar and shaking well.

  2. In a large bowl combine the kale, apple, cheddar and about 3 TBSP of dressing. Toss to combine

  3. Serve salad with extra dressing on the side.
