Kalpudding (Swedish Cabbage Meatloaf)
A Swedish meatloaf made with ground beef, ground pork, and caramelized cabbage. Goes great with boiled potatoes.

Ingredients
- 2 TBSP olive oil
- 2 TBSP raw honey
- 1 medium head of green cabbage, cored and shredded
- 1 large shallot, finely chopped
- 1/2 cup heavy cream
- 1/2 cup breadcrumbs
- salt and freshly ground black pepper
- 1 pound ground beef
- 1/2 pound ground pork
Directions
- Preheat the oven to 350°F.
- Heat the oil in a large cast-iron or large ovenproof saute pan over medium-high heat.
- Add the cabbage, honey, 1/4 tsp salt, and 1/8 tsp pepper to the pan and cook, stirring often, until the cabbage has softened, about 15 minutes.
- Take the pan off the heat then transfer 1/2 of the cabbage to a bowl and set aside then spread and press down the cabbage thats in the pan flat and even.
- In a separate bowl stir together the shallot, heavy cream, breadcrumbs, 1 tsp salt, and 1/4 tsp pepper then use your hands to mix in the ground beef and pork until everything is well combined.
- Spread the meat mixture into the pan on top of the cabbage thats in the pan and press the meat mixture down to flatten.
- Take the remaining cabbage thats in the bowl and spread it evenly onto the meat mixture then press to flatten.
- Place the pan in the oven and bake until the meat is cooked through and the cabbage is well browned, about 40 minutes.
