Lemon and Pea Orzo
An easy pasta side dish with garlic, lemon, and garden peas.

Ingredients
- 2 TBSP unsalted butter
- 2 medium cloves of garlic, minced
- 8 ounces orzo pasta
- 2 cups water
- salt and pepper
- 1 cup frozen peas, thawed
- 3 TBSP freshly squeezed lemon juice
Directions
- Melt the butter in a medium size saucepan over medium heat.
- Add the garlic and orzo and cook while stirring until fragrant, about 20 seconds.
- Add the water, 1/2 tsp salt, and 1/4 tsp pepper. Stir to combine and bring to a boil.
- Reduce heat to medium-low and simmer, stirring occasionally, 7 to 8 minutes or until the pasta has absorbed all the water.
- Stir in the thawed peas and lemon juice. Add salt and pepper to taste.
