Lentil Pizza Crust

Not only are lentils a superfood but they make a pretty good pizza crust too.

Ingredients

2 cups dry brown lentils, soaked for 8 hours then rinsed and drained
1 cup water
2 garlic cloves
1/2 tsp salt
1 tsp baking powder

Directions

1. Preheat oven to 425°F. Line a baking sheet with parchment paper and spray with a little oil.

2. Blend all the ingredients together in a food processor or blender until smooth. Pour batter onto the lined baking sheet and spread evenly.

3. Bake in the preheated oven for 25 minutes.

4. Spread on your sauce, cheese, or whatever you like.

5. Bake 10 more minutes. Remove from the oven and allow to cool 5 minutes.

6. Slice and serve.

Notes & Tips

Add seasonings to the lentil batter to suit your tastes (oregano, basil, red pepper flakes, etc)
