Light Mushroom and Lemon Angel Hair Pasta

Ingredients
- 12 ounces angel hair pasta
- 3 TBSP olive oil
- 8 ounces white button mushrooms, sliced
- 2 garlic cloves, minced
- 1 TBSP fresh lemon zest
- 1 TBSP fresh lemon juice
- 1/2 cup freshly grated parmesan cheese plus extra
- salt & pepper
- 1/4 cup freshly chopped parsley

Directions
- Cook pasta according to package directions reserving 1/4 cup of the pasta water.
- Heat the oil in a large saute pan medium-high heat. Add the sliced mushrooms and cook, stirring occasionally, until lightly browned, about 3 minutes.
- Take the pan off the heat and add the cooked pasta, garlic, lemon zest, lemon juice, Parmesan, 1/4 tsp salt, and 1/4 tsp pepper. Toss to combine and add a little of the reserved pasta water to keep the pasta from sticking together. Taste the pasta and season with additional salt & pepper if necessary then toss the pasta with the fresh parsley. Serve pasta with a little extra of the grated Parmesan top.
