Linguine pasta tossed with homemade spicy Italian sausage and fresh bell peppers.

Linguine with Italian Sausage and Bell Peppers recipe

Ingredients

  • 1 pound uncooked linguine pasta
  • 1 pound ground pork
  • 2 TBSP red wine vinegar
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp ground fennel seed
  • 1/2 tsp crushed red pepper flakes
  • salt & freshly ground black pepper
  • 1 red bell pepper, cut into thin strips
  • 1 green bell pepper, cut into thin strips




Directions

  1. Cook the linguine pasta according to package directions about 1 minute shy of al dente then drain the pasta reserving 1/2 cup of the pasta water and set aside.

  2. Mix together the ground pork, vinegar, oregano, basil, garlic, onion, fennel, crushed red pepper, 1 tsp salt, and 1/2 tsp black pepper until well combined.

  3. Add the seasoned pork to a dutch oven or large pot over medium-high heat and cook, while breaking up the pork, until browned, about 8 minutes.

  4. Add the bell peppers to the pot and cook, stirring occasionally, for about 3 minutes.

  5. Take the pot off the heat then stir in the cooked pasta along with some of the reserved pasta water until you reach a desired consistency.

  6. Taste and season with additional salt & pepper if needed.
