Linguine with Italian Sausage and Bell Peppers

Ingredients
- 1 pound uncooked linguine pasta
- 1 pound ground pork
- 2 TBSP red wine vinegar
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp ground fennel seed
- 1/2 tsp crushed red pepper flakes
- salt & freshly ground black pepper
- 1 red bell pepper, cut into thin strips
- 1 green bell pepper, cut into thin strips
Directions
- Cook the linguine pasta according to package directions about 1 minute shy of al dente then drain the pasta reserving 1/2 cup of the pasta water and set aside.
- Mix together the ground pork, vinegar, oregano, basil, garlic, onion, fennel, crushed red pepper, 1 tsp salt, and 1/2 tsp black pepper until well combined.
- Add the seasoned pork to a dutch oven or large pot over medium-high heat and cook, while breaking up the pork, until browned, about 8 minutes.
- Add the bell peppers to the pot and cook, stirring occasionally, for about 3 minutes.
- Take the pot off the heat then stir in the cooked pasta along with some of the reserved pasta water until you reach a desired consistency.
- Taste and season with additional salt & pepper if needed.
