Cook the linguine pasta according to package directions about 1 minute shy of al dente then drain the pasta reserving 1/2 cup of the pasta water and set aside.
Mix together the ground pork, vinegar, oregano, basil, garlic, onion, fennel, crushed red pepper, 1 tsp salt, and 1/2 tsp black pepper until well combined.
Add the seasoned pork to a dutch oven or large pot over medium-high heat and cook, while breaking up the pork, until browned, about 8 minutes.
Add the bell peppers to the pot and cook, stirring occasionally, for about 3 minutes.
Take the pot off the heat then stir in the cooked pasta along with some of the reserved pasta water until you reach a desired consistency.
Taste and season with additional salt & pepper if needed.
