Liptauer (Hungarian Cheese Spread)
A cheese spread made with cottage cheese, cream cheese, capers, caraway seeds, and sweet paprika served with toasted dark rye bread.

Ingredients
- 1 cup cottage cheese
- 4 TBSP unsalted butter, softened
- 8 ounces cream cheese, softened
- 1/4 cup sour cream
- 1 TBSP capers
- 1 TBSP finely chopped onion
- 1 tsp caraway seeds
- 2 tsp sweet paprika
- 1/2 tsp dry mustard
- 1/4 tsp salt
- 1/4 tsp black pepper
- toasted dark rye bread for serving

Directions
- Add the cottage cheese to a large bowl then mash the cottage cheese using the back of a fork.
- Stir the butter in with the cottage cheese until well combined.
- Mix in the cream cheese, sour cream, capers, onion, caraway seeds, paprika, mustard, salt, and black pepper until well combined.
- Line the inside of a small bowl with something to help release the cheese mold later (plastic wrap, cheese cloth, parchment paper, etc.) so that the lining is hanging over the edges of the bowl a little bit.
- Spoon the cheese mixture into the lined bowl and spread evenly.
- Cover the bowl and refrigerate for at least 3 hours to allow the flavors to meld.
- When ready to serve remove the cover from the bowl then flip it over onto a serving plate. Lift the bowl and remove the lining off the cheese mold.
- Surround with toasted rye bread and serve.
