1 cup cottage cheese
4 TBSP unsalted butter, softened
8 ounces cream cheese, softened
1/4 cup sour cream
1 TBSP capers
1 TBSP finely chopped onion
1 tsp caraway seeds
2 tsp sweet paprika
1/2 tsp dry mustard
1/4 tsp salt
1/4 tsp black pepper
toasted dark rye bread


1. Press the cottage cheese through a fine mesh sieve in a large bowl.

2. Use a wooden spoon to blend the butter in with the cottage cheese until smooth.

3. Add in the remaining ingredients (except the rye bread) and stir until smooth.

4. Line the inside of a small bowl with plastic wrap and spoon in the cheese mixture evenly (this helps release the cheese mold easily from the bowl).

5. Cover the bowl and refrigerate for at least 3 hours to allow the flavors to meld.

6. When ready to serve remove the cover from the bowl and flip it over onto a serving plate. Lift the bowl and remove the plastic wrap from the cheese mold. Surround with toasted rye bread and serve.
