INGREDIENTS
1 pork tenderloin, trimmed
2 TBSP oil, separated
salt & pepper
2 TBSP Ancho Powder or your favorite spice rub, optional

DIRECTIONS
Heat the oven to 350 degrees F.
Dry the tenderloin and brush with 1 TBSP oil, sprinkle with salt and pepper.
Roll the pork in foil and twist the ends of foil on both sides to create a solid cylinder shape all the same width.
Bake for 30 minutes or until 140 degrees F internal temperature.
Remove the pork from the oven and either move on to step 6 or refrigerate overnight.
Unwrap the pork from the foil and roll in the ancho powder if using.
Heat a skillet with oil and sear the pork on all sides.
Slice the tenderloin and serve.
