A homemade pizza dough brushed with a spicy garlic oil then loaded with fresh spinach, fresh mozzarella, red onion, artichokes, green and black olives, and feta cheese.
1 tightly packed cup fresh baby spinach leaves, stems removed and chopped
5 ounces fresh mozzarella cheese, sliced or shredded
14-ounce can of artichoke hearts, drained and chopped
1/2 cup sliced black olives
1/2 cup sliced green olives
1/2 cup diced red onion
2 ounces crumbled feta cheese
DIRECTIONS
THE DOUGH:
In a stand mixer or large bowl mix the yeast, honey and water. Let stand 10 minutes or until it begins foaming.
Add the 1 TBSP oil, salt and flour and mix until well combined and dough pulls away from sides of bowl.
Pour a very small amount oil into a separate large bowl.
Knead the dough 10 minutes by hand or about 5 minutes using a stand mixer with a dough hook.
Form the dough in a ball and place in the oiled bowl, flip around a few times to cover the dough al over in oil. Cover and put in a warm place to rise, about 45 minutes.
Stretch out dough to a 16-inch diameter circle and place on a lightly oiled pizza pan.
THE ASSEMBLY:
Preheat the oven to 450°F.
In a small bowl mix together the oil, garlic, and red pepper flakes and brush onto the pizza dough. Sprinkle the spinach on next then add the mozzarella evenly on top. Add the remaining toppings then top with the feta cheese.
Bake in the preheated oven for 15 to 18 minutes or until crust is golden brown.
