Mexican Picadillo
A traditional Mexican dish of ground beef, potatoes, and spices served over rice or used as a filling for tacos, gorditas, or empanadas.

Ingredients
- 1 TBSP olive oil
- 1 pound ground beef
- 1/2 cup diced onion
- 1/2 cup diced green pepper
- 4 cloves garlic, chopped
- 2 cups peeled diced russet potato
- 1 tsp salt
- 1/4 tsp black pepper
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp chili powder
- 1 1/2 cups water
- 2 cups diced Roma tomato

Directions
- Heat the oil in a large skillet over medium-high heat. Add the ground beef while breaking into small bits and cook until browned.
- Add the onion, green pepper, garlic, potato, salt, pepper, cumin, coriander, and chili powder and stir into the beef. Cook for about 2-3 minutes until the onion begins to soften and the spices are aromatic.
- Stir in the water and tomatoes and bring to a boil. Lower the heat to medium-low and cover the pan. Cook about 10 minutes stirring often. Remove the lid and turn the heat to low and cook another 10-20 minutes or until the liquid is cooked down.
- Taste and season with salt and pepper if needed. If the potatoes are not fully cooked add another 1/2 cup of water and cook down some more. Serve this with rice or as filling for tacos or gorditas.
