Mushroom, Spinach & Swiss Popovers

A savory popover (or maybe a muffin) with mushrooms, spinach and creamy baby swiss cheese.

  • 4 large eggs
  • equal amount of flour
  • equal amount of milk
  • 1/2 tsp salt
  • vegetable oil
  • 8 oz white mushrooms, sliced thin
  • 4 oz frozen spinach
  • 1 TBSP butter
  • 1 TBSP cooking oil
  • 3/4 cup finely shredded baby swiss cheese
  • salt and pepper



  1. Make sure your eggs, flour and milk all weigh equal amounts. Blend them together with the 1/2 tsp salt in a blender or food processor until well combined. Cover and refrigerate for at least 30 minutes.

  2. In a non-stick pan melt the butter with the 1 TBSP oil over medium heat. Add the mushrooms and cook 4 minutes, stirring occasionally. Add the spinach to the pan with 1/2 tsp salt and 1/4 tsp pepper, cook about 3 to 4 minutes, stirring occasionally. Take off the heat and allow to cool about 5 minutes.

  3. Preheat oven to 425°F and fill 9 of the muffin cups on a muffin tin with 1 tsp of vegetable oil each. Place the muffin tin into the oven until oil is very hot, about 6 to 7 minutes.

  4. Stir the mushroom mixture and cheese in with the batter. When the oil in the muffin tin is hot pour the batter into the muffin cups and place back in the oven. Bake for 25 minutes, makes 9 popovers.
