1/4 cup extra-virgin olive oil
2 TBSP freshly squeezed lemon juice
salt & pepper
8 ounces cremini mushrooms, sliced thin
4 medium celery ribs, sliced thin
1/4 cup fresh parsley leaves
2 ounces Parmesan cheese, shaved


1. In a large mixing bowl whisk the oil, lemon juice, 1/4 tsp salt, and 1/4 tsp pepper.

2. Add the mushrooms, celery, parsley, and Parmesan cheese and toss to combine.

3. Season with salt & pepper to taste. Serve.
