INGREDIENTS
2 pounds russet potatoes
3/4 cup warm whole milk
1/4 cup olive oil
salt & freshly ground black pepper

DIRECTIONS
Peel and cut the potatoes into roughly 1-inch pieces.
Place the potatoes into a large pot then pour in enough water to cover about 2-inches above the potatoes.
Add 1/2 tsp salt to the pot and bring to a boil over medium-high heat.
Boil the potatoes until tender, about 15 minutes.
Drain the potatoes then place them into a large bowl.
Add the warm milk in with the potatoes then use a potato masher to mash the potatoes well.
Stir in the olive oil, 1/2 tsp salt, and 1/4 tsp black pepper until well combined.
Taste and season with additional salt & pepper if necessary.
