Olive Oil Mashed Potatoes

Simple creamy mashed potatoes made with olive oil, milk, salt & pepper.

Olive Oil Mashed Potatoes recipe

Ingredients

  • 2 pounds russet potatoes
  • 3/4 cup warm whole milk
  • 1/4 cup olive oil
  • salt & freshly ground black pepper




Directions

  1. Peel and cut the potatoes into roughly 1-inch pieces.

  2. Place the potatoes into a large pot then pour in enough water to cover about 2-inches above the potatoes.

  3. Add 1/2 tsp salt to the pot and bring to a boil over medium-high heat.

  4. Boil the potatoes until tender, about 15 minutes.

  5. Drain the potatoes then place them into a large bowl.

  6. Add the warm milk in with the potatoes then use a potato masher to mash the potatoes well.

  7. Stir in the olive oil, 1/2 tsp salt, and 1/4 tsp black pepper until well combined.

  8. Taste and season with additional salt & pepper if necessary.
