Oven Roasted Jamaican Jerk Chicken

Ingredients
2 TBSP olive oil
1 TBSP onion powder
1 TBSP garlic powder
1 tsp ground allspice
1 tsp cayenne pepper
1 tsp salt
1/2 tsp ground black pepper
1/2 tsp dried thyme
1/4 tsp ground cinnamon
1/4 tsp ground nutmeg
1 whole chicken (5 to 6 pounds)
Directions
1. Preheat the oven to 450°F. Line a rimmed baking sheet with foil and place a baking rack on top.
2. Pat the chicken dry with paper towels and place on the baking rack breast-side up.
3. Mix the oil and spices together in a bowl then rub the spice mixture all over the outside of the chicken and under the skin of the breasts as best as you can. Truss the chicken with kitchen twine.
4. Roast the chicken in the oven for 20 minutes then reduce the heat to 375°F and roast for 45 to 60 more minutes or until chicken is cooked through (165°F internal temperature).
5. Take the chicken out of the oven and allow to rest for 15 minutes.
