Parsley- Caper Vinaigrette

Ingredients
2 TBSP Red wine vinegar
1 tsp chopped garlic, about 2 cloves
1 medium shallot, separated (1 TBSP Chopped, 1 tsp minced)
2 tsp Dijon mustard
1/2 tsp Kosher salt
1/8 tsp black pepper
1/2 cup oil
3 TBSP Capers
1/4 cup fresh chopped flat leaf parsley
Directions
1. Put vinegar, garlic, 1 TBSP chopped shallot, Dijon, salt, pepper in a glass 1 cup measuring cup.
2. Put a stick blender in and turn on, with the motor running slowly drizzle in the oil.
3. Add the minced shallot, capers and parsley and stir together.
4. Add a bit of water to thin if needed
5. Serve
