Pearl Meatballs
Servings: 4
Total Time: 30 minutes plus 4 hours to soak rice
Ingredients
1 cup glutinous (also known as sweet or sticky) rice
1 pound ground pork
1-inch piece of ginger, minced
1/4 cup minced carrot
2 tsp cornstarch
1 large egg
2 TBSP soy sauce
2 tsp rice wine
Directions
1. Add the rice to a bowl and cover with plenty of water. Cover the bowl and soak for at least 4 hours. Drain the rice and spread out onto a large plate.
2. Add the remaining ingredients to a large bowl and mix until thoroughly combined. Form the mixture into balls roughly 1-inch in diameter. Roll the balls in the rice until completely coated.
3. Steam the meatballs in a steamer or over boiling water for 17 to 20 minutes or until pork is cooked and the rice has a pearly white color to it.
